Good for 10" cake or batch of cupcakes

Ingredients
1/2 cup low fat cottage cheese, sieved
1/8 teaspoon salt
1/2 tablespoon lowfat margarine, melted
1/2 cup Splenda granular (or other artificial sweetener equivalent to 1/2 cup sugar)
1 teaspoon almond or vanilla extract
Directions
Mix all ingredients; beat until smooth.
Done!
