~~Jess's POV~~ I got home from Publix after an hour of shopping. I kept on seeing things that interested me, and couldn't resist buying mini cupcakes. While I was putting away the groceries, I called Marie Anne. Joe had told me that she was gone for a walk, but I wanted to make sure she was alright. Nick walked in right as she picked up. Whenever Marie Anne went for a walk, Nick seemed to know I was calling her. I usually hung up before he could get the phone though. Today, though, he was too sneaky. I didn't even know he was behind me until he took my phone away. ~~Nicks POV~~ I just needed to hear her voice again. I knew it wasn't likely that she would talk to me, but I just needed to know she was somewhere on this planet. I couldn't focus after she left, it was like she took a part of me with her. A very important part of me actually, she took my heart. ~~Nicks POV~~ "Marie Anne?" I asked, wondering if she would reply. I so desperately wanted to hear her voice, even if she just said "hi." For a moment or two, she didn't respond. "Nick?" She replied. "Look, I'm really sorry, but I understand if you don't believe me. I just need to know that you're okay, wherever you are." I said. "I'm......fine." She told me, choking up a bit. "Marie Anne... I miss you." I told her, tears forming in my own eyes. "Me too Nick.. Me too." She replied, then I heard the click, meaning she had hung up. It didn't matter that our conversation had lasted less than a minute , I knew she was doing ...

This Rich Lemon Cake can make a Beautiful Centerpiece on your Holiday Table

For a different holiday centerpiece this year, use one of your own desserts.  This Rich Lemon Cake is not only tasty but it makes a great centerpiece on your dinner or dessert table.  The decorating instructions to make this a Thanksgiving or Christmas centerpiece are included at the end of this recipe.  You can easily use your own ideas to make this a lovely centerpiece for any other holiday.

RICH LEMON CAKE 1 1/2 cups granulated sugar2 cups cake flour2 tsps baking powder1 (3-oz) pkg lemon gelatin3/4 cup low-fat milk2/3 cup canola oil2 tbsp lemon lemon extract4 large eggs, separated

In a mixing bowl, sift together 1 1/4 cups of the sugar, the flour, baking powder, and gelatin. In a smaller bowl, combine the milk, oil, and lemon extract. Beat the liquids into the dry ingredients until the mixture is smooth. Beat the egg yolks, one at a time, into the batter.

In a clean bowl, whip the egg whites with the remaining 1/4 cup of sugar until stiff but not dry. Fold the egg whites, lightly but thoroughly, into the batter.

Spray a ring pan with nonstick cooking spray and dust lightly with flour. Spoon batter into pan and bake at 325 degrees for 40 to 50 minutes until the cake springs back lightly when gently touched. Immediately turn out onto a wire rack to cool.

NOTE: To make into a pretty Christmas cake to use as a centerpiece on your Christmas table or dessert table, place the cooled cake on a pretty cake plate. Using a thin buttercream or your favorite white icing, drizzle over the top of the cake allowing some to run down the sides. Place 6 or 8 drained and dried Maraschino cherries spaced evenly on the top of the cake. Connect the cherries with a thin green vine line or place frosting leaves around the cherries. Thicken the remaining icing and make a ball or shell border around the bottom of the cake. Position a wide red or green candle in the center of the cake.

To use for a Thanksgiving centerpiece color some of the thickened icing in fall colors and make scattered leaves over the top. Make a bottom border the same color as your fall candle. Insert candle in center.

Make Christmas Tree Cupcakes This Year

Chirstmas is coming soon,have you ever prepared your Christmas cupcakes well?Why not charm everyone with these pretty little cupcakes with little Christmas trees sitting atop them? You will be surprised at how easy it is to make them and how fast you can whip up batches to feed a crowd! Whipped cream and one single icing tip is all you need to make these.



What You Will Need:• Cupcakes, any flavor• Sweetened Whipped Cream• Green Food Coloring• Chopped candied fruit, redEquipment Need:• Icing Bag• Open Star Icing Tip

How To: 1. Whip whipping cream till stiff peaks form.2. Reserve some plain white icing for the floret border and add a tiny drop of green food color to the rest.3. Mix the color into the cream very lightly to get a marbled effect.4. Spread this icing on each cupcake with an icing knife or spatula.

Making the Trees

1. Mix in green food coloring to the remaining icing to make the trees.2. Fit an icing bag with an open star tip (No. 17 or 18) and fill the bag with the green whipped cream.3. To start making the trees, pipe out cream in center of the cupcake and bring outwards. For the first few lines, bulge out the icing in the center and then bring out. This will give the base of the tree some height for the other ‘branches’ to stand.

Floret Border:

With the same icing tip and plain white whipping cream, make little florets all around the edge of the cupcake.

Pipe out cream and press slightly on the same place to form a little floret. Make florets close to each other all around the rim.

Decorations:

1. Sort out red colored candied fruit from a mixed pack or use dried red berries.

2. Chop them up and puck into the trees to make tree decorations.

Tips:

Whether preparing for your family or for a party, assembly line is the best way to get these done quick and well. Spread cream icing on all cupcakes first and then make trees on all of them.

Try making the trees and florets on a plate first. Once you get the hang of it, start making them on the cupcakes.

Try This Halloween Spooky Cupcake At Your Party

Celebrating Halloween is never the same without spooky cupcakes. Whether trick-or-treating or bonding with family and friends, these tasty delights are great to serve for the Halloween. Make and decorate your individual cupcake or buy it ready-made at your favorite pastry shop.

Cupcake decoration requires less effort, allowing you to be creative with it, like whipping up your delicious own icing. Admit it; a cupcake isn't just the same without icing. It makes your cupcake more palatable and adds an extra burst of flavor to any ordinary cupcake. If you're thinking making your homemade icing will be a tough task, think again.

In fact, you don't have to be a pro to create your own cupcake icing. With a little imagination and passion for coming up with tasty delights, even a kid can make frosting in a breeze. If you're interested to know how you are able to do this, read on.

The following items are needed to prepare your own cupcake icing:

4 tbsp butter, softened

5 cups powdered sugar, sifted

2 eggs

6tbsp cream

1 & 1/2 tsp. vanilla extract

1/4 tsp salt

2 oz, chocolate, unsweetened and melted

Orange food coloring

Prepare cream butter. Next, gradually add sugar, leaving a portion to be used for another mixture. Blend well after every addition. This time, add remaining sugar alternately with the egg whites followed with 2 tbsps of cream. Blend until you reach the right consistency of a spread.

Then add in vanilla extract and salt. Distribute the frosting into two equal parts. Put orange coloring to one part of frosting and spread between cake layers.

If you want to make a pumpkin decoration, make sure to save about 1/4 of orange frosting. Then, for the other part, add in chocolate and 4 tbsps of cream, blending well until you reach the right consistency. When your chocolate frosting is ready, spread it on the top and sides of cake. You could also adorn the top with jack-o-lantern, which is made of orange frosting.

You may also use margarine as a substitute for butter. Also, an electric beater can help give your frosting better consistency and a really nice, soft fluff. If you don't have an electric beater, you may use an egg beater. Make sure to blend all ingredients well to achieve your desired consistency.

Now you're ready to give your holiday cupcake the frosting it deserves! Write words or put whatever design you like on your cupcakes! Let your creative juice flow. It's that simple! Go and try it yourself. You won't even have to break a sweat at it.

Diet Cupcakes: Losing Weight Can Be This Sweet

More often than not, every time a person goes on a diet to lose weight, one of the first things to go out of the window are sweets. Yes, cakes, cupcakes, chocolates, cookies, brownies, muffins, and all that is divinely saccharine are branded as forbidden food during the weight loss period. However, depriving one’s self of such delectable pleasures will only add fuel to one’s sweet cravings once the diet is off leading to a vicious diet cycle and a yoyo weight. So how do we lose weight and get to eat our sweets, or in this case, cupcakes, too? Here’s a simple recipe for cupcakes that can very well fit into a weight loss regimen and still taste quite delicious.

Diet Soda Cupcakes

Ingredients:

1 box chocolate cake mix

1 egg white 1 can diet soda (preferably a Diet Coke)

Steps:

1) Preheat the oven according to chocolate cake mix directions. Place cupcake liners on the cupcake pan.

2) In a bowl and using an electric mixer with the paddle attached, beat the chocolate cake mix, egg white, and diet soda until smooth in consistency.

3) Pour the cupcake batter into prepared cupcake pans with liners.

4) Bake cupcakes according to chocolate cake mix instructions. Cupcakes are done when you insert a toothpick into the cupcake and it comes out clean.

Variation: If you want your diet cupcakes to be of the vanilla kind or of non-chocolate origin, substitute the chocolate cake mix for white or yellow cake mix and the diet soda for a clear diet one. These diet cupcakes basically have 120 calories or less per piece depending on the cake mix you are using. With such low calorie count for a dessert, these cupcakes are definitely good for weight loss watchers who still want to maintain some normalcy in their diet. Remember, with innovative recipes like these, you can lose weight and still eat your cupcakes too!
